We expect little to no restaurant sales for the next several weeks. We have, logically, drastically reduced our microgreens production, as those products represented 60 to 70% of our total restaurant sales.
Our best hope for economic survival as a farming family is to convert all our (wholesale priced) restaurant lettuce and greens sales into retail sales at our Farmstand. If we can sell ALL our lettuce at a retail rate, instead of a wholesale rate, we can pay the electric bill, maintain our car and farm insurance, keep up with the car payment, and buy food we can't grow.
You can buy our lettuce for the same amount your local grocery store charges. It is always fresh, tastes amazing, and lasts for at least 10 days. If 70 customers buy 3 heads of lettuce every day, we can keep the lights on and the fans turning at the farm.
